Yield: 6 Muffins
- Coconut Flour – 2 tablespoons
- Almond Flour – 1/4 cup
- Erythritol – 1/4 cup
- Egg – 1 large
- Ghee – 2 tablespoons
- Almond Milk – 2 tablespoons
- Baking Powder – 1 teaspoon
- Blueberries – 1/3 cup
Preheat oven to 350 degrees. In a bowl, mix together coconut flour, almond flour, erythritol, egg, ghee, almond milk, baking powder. Gently fold blueberries into mixture. Divide into 6 equal portions. Use silicone molds or muffin tray. Bake at 350 for 20 mins. Serve with your farm fresh eggs!
