Who wants some guilt-free chocolate pudding?
Don’t you just want to go back on your childhood days when you can eat chocolate pudding to your heart’s content? Well, you still can! And we have the miraculous chia seeds to thank for it! These tiny black seeds undergo a really cool gelatinous transformation when wet, making it the perfect substitute for pudding deserts. And more importantly, it delivers a massive amount of health benefits like fiber, protein, omega-3 fatty acids plus a whole lot of antioxidants. Now add in some raw cacao powder (which is equally nutritious!), and you have this scrumptious treat to end your meal:
Chocolate Chia Pudding
- 1⁄4 cup chia seeds whole or ground
- 1⁄4 cup coconut milk
- 1⁄2 cup water or almond milk
- 1 tbsp raw cacao powder unsweetened
- 5-10 drops Stevia extract
- Optional: add ¼ tsp cinnamon and/ or pinch cayenne pepper
Mix all the ingredients. Let it sit for at least 10-15 minutes, ideally overnight in the fridge.
